The center carries out a series of work which is centered around the common technical problems of the whole industry such as the quality control of the chilled meat processing, modernization of traditional meat processing, processing and quality control of the low-temperature meat and meat grading. Moreover, some meat scientific issues like mature mechanism of meat, the mechanism of the flavor formation of the traditional meat products and the mechanism of food gel formation .Number of the achievements has reached to the place which is leading in the domestic and also advanced internationally. The center has obtained one piece of national award ,nine pieces of Provincial award, twenty-two pieces of Identification of technical achievements and new achievements as well as thirty-nine pieces of patents, nine pieces of the formulations of the meat standards of the national and the industry and four pieces of the international standards. Additionally, the center has published over 600 papers (including more than 70 papers employed by SCI), where the paper named "Secrets of the Jinhua ham" is reported by "Nature China" as one of chinese latest research highlights of 2007 and that is also ranked second in the Top10 of the year. In 2007, The center has holded the 53rd International Conference of Meat Science and Technology successfully ,which earned it the high international reputation.
“The Center” exist 59 fixed staffs now ,including 27 doctors , 37 senior titles, one excellent teacher honored by the Ministry of Education ,five young honored Outstanding contributions by the Ministry of Agriculture ,two staffs staying in the first and second level at the "Facing Wan Talents Project ", five cross-century talents honored by Jiangsu Province , one funded by the "Six Personnel Peak" , five people rewarded as Young Leaders by "333 High-level Personnel Training Project" in Jiangsu Province and one become the Young Academic Leaders in Nanjing .Professor Zhou Guanghong , the head of “The Center” was invited to be the deputy editor of the international journal “Meat Science”、Professional Committee member of UN/ECE、director of The national center of meat quality and safety control 、director of the Ministry of Agriculture Key Experiment in agricultural and livestock products 、director of China-US Joint Research Center on Food Safety and Quality Control、director of the modern agriculture experts of“863 projects”
“The Center” exist 5000m²research space ，8000 m² pilot plant now, including one pilot modernization production line on East-West meat products，more than 400 sets of advanced equipment worth about 40 million RMB for detection，it can meet the needs of the analysis and testing on meat quality 、the development of engineering and technology research on new products and many other needs.
